Sacher cake (Austria)

The Original Sacher-Torte has been the most famous cake in the world since 1832, invented by Franz Sacher confectioner for Metternich duke. The the original recipe a well-kept secret of our hotel. Only the Original Sacher-Torte is produced according to this original recipe: The basis is a chocolate cake, thinly coated by hand with best-quality apricot jam. The chocolate icing over this is the crowning glory. The Original Sacher-Torte tastes best with a portion of unsweetened whipped cream, complemented perfectly with a “Wiener Melange” (coffee with milk).

Preparation

  • Mix the butter, sugar, vanilla sugar und and egg yolks until fluffy
  • Add the chocolate, grated or melted, and beat until frothy
  • Beat the egg white with the granulated sugar until stiff and carefully fold into the mixture
  • Add the flour, mixed with the baking powder
  • Put the mixture in a well greased baking tin and bake for about an hour at 170 °C in a preheated oven.
  • Leave the oven open just slightly for the first 15 minutes
  • Once finished, leave the flan to cool on a wire rack
  • Warm up the apricot jam and pass through a fine sieve

  • 140 g butter
  • 140 g sugar
  • 6 eggs
  • 180 g cooking chocolate
  • 30 g granulated sugar
  • 1 sachet vanilla sugar
  • 140 g flour
  • 100 g apricot jam
