Apple cake with cinnamon and raisins (Estonia)

Preparation

 

 
Mixture

 
·Beat the margarine and sugar until fluffy, then mix in the eggs and sour cream

 
·Add the flour, mixed with the baking powder, until the mixture has the consistency of mashed potato

 
·Mix well

 
·Grease a springform baking tin (24 cm) and fill with mixture

 

 
Filling

 
·Peel and slice the apples (the peel of organic or home-grown apples is highly nutritious and should be left intact)

 
·Grease a springform baking tin (24 cm) and fill with mixture

 
·Top with apples and raisins

 
·Bake for around 20 minutes on the middle shelf of a preheated oven (180 °C)

 

 
Topping

 
·Leave to cool

 

 
Turn out of baking tin and sprinkle with a mixture of icing sugar and cinnamon
